Nothing fancy about this recipe, it is just good, stick to your ribs, home cooked food…admittedly with a lot more flavor than you will remember from your childhood.

Figure I’d share something easy enough for @Pete Correale to make that shit tastes damn good.
INGREDIENTS
- 1 tbsp butter
- 1 tsp olive oil
- 2 lbs coarsely ground antelope (any ground game will do)
- 1 large sweet onion, diced
- 1 red bell pepper, diced
- 1 jalapeno pepper, minced
- 5 cloves garlic, pasted
- 1 beer (I prefer a darker beer for extra flavor, but any will do)
- 1 small can tomato paste
- 2 cups ketchup
- 1 tbsp chili powder
- 1/2 tsp black pepper
- 1/2 tsp sea salt
- 1/4 tsp red pepper flakes
- 2 tbsp dark brown sugar
- 1 tbsp spicy brown mustard
- 1 tsp smoked Spanish paprika
- 1 tbsp Worcestershire sauce

- Hawaiian sweet rolls
- melted butter
DIRECTIONS
- Heat up a large skillet over med-high heat.
- Add butter and brown the ground meat, breaking it apart as it cooks.
- Once browned, remove meat and set aside.
- Add a bit of olive oil to the same pan, then toss in the onions and peppers, cook until onions are translucent and peppers begin to get soft. Add garlic and cook another minute or two.
- Add ground meat back in to the pan
- Add the tomato paste, stir well and allow to cook for a minute or two.
- Add the beer and ketchup and stir well.
- Add chili powder, pepper, salt, red pepper flakes, brown sugar, spicy mustard, paprika and Worcestershire sauce. Combine all ingredients well.
- Lower heat and allow to cook at a simmer for 15 to 20 minutes, until mixture thickens.
- Remove from heat and set aside.
- Brush rolls with melted butter and grill in a pan, or broil lightly, until they begin to brown on the edges and get slightly crisp.
- Serve sloppy joe on the toasted buns.
