Somewhere on a hunt property a spike buck looked like a doe. Hunt club was none the wiser and I find myself looking for new ways to cook a tenderloin. Venison Wellington is a must if you haven't had it. A classic welly recipe works great but I would suggest doing the following in addition to:

- Season your meat with salt, pepper, and onion powder
- Deglaze the duxelle with a high proof bourbon
- Make a red wine sauce and keep the shallots - don't strain
- Always serve with potatoes

Enjoy gents, the venison carried a much better flavor than traditional beef and it's an easy crowd pleaser

Keep posting like this and you might get a spot as the camp chef for us.

Dude, this looks amazing. I, too, was tricked by a gender-fluid whitetail this past season…
 
That shit looks danm good.... Ive always wanted to try and make this, but, I am too much of a mongaloid.... I will stick to eating it raw right off the boner.
